Although grown here for 1,000 years, Verdejo is only now coming to the fore internationally thanks to modern know-how – early morning harvesting and the ‘blanketing’ of grapes with inert gas straight after picking to protect them from oxidation. Full marks to local supremos the Sanz family, who combine six generations of tradition with state of the art technology. Palacio’s breezy, citrus and apricot freshness is perfect for pairing with fresh seafood, canapés or a smoked salmon salad.
